Dining at Maca de Castro this spring was a revelation — an experience that left no doubt about Chef Maca’s deep love for Mallorcan gardens. Her seasonal menu brought that passion to life in every detail. From the very first bite, it was clear: vegetables take centre stage here, not as sides, but as stars.
The spinach tartlet was a delicate triumph, while the skate with fennel was nothing short of spectacular — the technique of preparing the skate to resemble cuttlefish was both surprising and masterful.
